spaghetti squashThe Fresh Market is pleased to be one of the few retailers to offer a wide selection of exotic and wild mushrooms. A versatile and easy-to-prepare item, mushrooms can be sautéed, marinated or stuffed. They also make great additions to soups, salads and entrees. We invite you to try some of our exotic varieties listed below.

French Horn
The large, conical fruiting bodies of these mushrooms present a wonderful cream and coffee color. The distinctive oyster mushroom aroma of straw and freshly mowed hay works well in Asian dishes, soups, and as a simple grilled vegetable.

Chanterelle
This trumpet-shaped mushroom is a bright golden color and a taste to match. Fruity and peppery, with hints of apricot, the chanterelle is very popular worldwide. Prepare it in dishes with egg, light meat dishes and vegetable medleys.

Fresh Morels (available in the spring only)
A spring darling, these unique cone-shaped mushrooms range in color from blonde to ash grey. Cooks on four continents favor this mushroom and its intense earthy flavor, which works well sauteed or as an accompaniment to eggs.

Bluefoot Mushrooms
You will find these mushrooms with large convex caps in colors ranging from purple to magenta. This versatile mushroom is well suited as a foil for rich sauces or wine dishes.

Hen of the Woods (Maitake)
This delicate, many-petaled mushroom boasts a woodsy odor and looks beautiful on any plate. The Japanese claim this mushroom to be medicinal for digestive and cancer remedies.

Woodear Mushrooms
This brown cup mushroom, also referred to as a "tree ear" in China, has a shellfish-like texture and subtle smoky aroma, which make it well suited for soups, stir fries and seafood dishes.

Black Trumpet Mushrooms
These beautiful black trumpets emit the rich scents of an oak forest. This mushroom adds rich flavoring and coloring to game or grain dishes.

Porcini
These pine-earthy treasures grow both in the spring and the autumn. The brown-to-tan caps are attached to white stems. This is one of the great mushroom treasures and is best served in simple preparations such as stewed or grilled with olive oil and layed over pasta, rice or polenta.

Hon Shimejii
