Middleneck Clams
Simply soak in water for 15 minutes to help filter any sand out of the clams then use as your recipe directs.
How to Prepare Mussels
To clean mussels, put them in a large bowl with 2 quarts of water and 1/2 cup flour. Soak for 30 minutes or until the mussels disgorge any sand. Drain mussels, then remove the"beard" from each with your fingers. If they're dirty, scrub with a brush under running water. Discard any mussels whose shells are not tightly shut.
Grilling Oysters
Grilling oysters allows them to open naturally so they are easier to enjoy. Place oysters on grill. Cook over medium-high heat 8 - 10 minutes or until shells open
(about 1/4 - 1/2"). Remove from grill, pry open with an oyster knife, discarding the empty half shells. Run knife under meat of oyster to release. Seve with cocktail sauce, hot sauce, melted butter and crackers.
