Grinding
The correct grind ensures well-balanced flavor. Too coarse of a grind results in a weak taste; too fine means a bitter tasting cup of coffee. We strongly recommend grinding your coffee the way you like just before brewing.
Here’s a quick guide to choosing the right grind: The shorter your brewing time will be, the finer the grind should be.
Brewing with a Drip Coffee Maker
No other appliance says good morning better than a drip maker. Coffee brewed with a drip is light bodied and crisp. Start with the best quality water possible when brewing. Run the water from your tap for 15 seconds to make sure it is fresh. Next, start with two level tablespoons of ground coffee for every six fluid ounces of water (then adjust to taste). To ensure an even extraction, tap the basket lightly to settle the grounds before inserting into the brewer.
We recommend brewing with the hottest water possible (ideally between 195°F and 205°F). Make sure to rinse the basket and carafe between each brewing to get rid of any leftover oils and grinds.
Brewing with a Press
Just slightly off the beaten path is the press pot. To begin, boil water, then measure and grind coffee until coarse. Add grinds to carafe. Start with 2 tablespoons per 8 fluid ounces. Pour most of the water into the pot saturating the grinds completely.
Allow coffee to steep for 3-5 minutes, depending on the strength you like. (3 minutes is milder, 5 minutes is wilder.) Stir the grinds gently and push the plunger straight down. Now, enjoy your wonderful creation.
Brewing Stovetop Espresso
Stovetop espresso makers brew a hearty, robust coffee. First, fill the lower section of the brewer with fresh, cold water to about ½” below the brass safety valve built into the side of the base. Next, slightly overfill the metal filter funnel with freshly ground, dark roast coffee. Use a grind that is comparable to a coarse drip grind. Place the filter funnel back into the base. Next, place the stovetop espresso maker over a medium heat.
Remove the brewer from the burner once the coffee is finished brewing. You’ll know this moment because the brewed coffee stops flowing into the top chamber, the bubbling noise ceases, and only steam is coming out of top. Pour and savor this robust cup!
Brewing with a Vacuum Pot
Ask a diehard coffee lover and they will probably tell you that the vacuum pots are the best possible way to brew a cup of coffee. Start by grinding as you would for auto-drip. Use one heaping tablespoon per 5 oz. of water. Preheat the water in an electric kettle. When the water starts to near a boil, place the top globe (with coffee in it, but uncovered) onto the bottom globe. When there is enough water in the top globe to saturate and cover the coffee, quickly stir the coffee and then put the lid onto the globe.
The moment there is almost no water left in the bottom globe, remove the brewer from the heat source. Be very careful and use hot pads. You will see coffee begin to extract back through the filter into the bottom globe. Once the water stops pulling back through the coffee and the filter, remove the top globe and pour the coffee into cups. Use hot pads when pouring. Enjoy your cup of fantastic coffee.
