Carrot, Radish, and Cabbage Salad with Creamy Coconut Dressing (Fresh Flavors Aug '14)
- Salad Ingredients:
- 3 regular scallions, thinly sliced on the diagonal
- 1/2 bunch radishes, tops removed & thinly sliced
- 2 regular carrots, julienned
- 2 c. Napa cabbage, shredded
- 1/4 c. cilantro, chopped
- 1/4 c. cashews, chopped (optional)
- Creamy Coconut Dressing:
- 1/2 c. coconut milk , found on the Asian foods aisle
- 1 1/2 tbsp. honey
- zest and juice of 1 lime
- 1 tbsp. soy sauce
- 1/2 tsp. pepper
- 1/2 tsp. salt
Combine first 6 ingredients in a large mixing bowl. In a small bowl whisk together all ingredients for creamy coconut dressing. Pour dressing over salad and toss until the vegetables are fully coated.
Serve with Peri Peri Grilled Chicken Pitas

Pretty great ingredients, tweak the dressing
The ingredients are great. My family didn't care for the
sweet dressing. It should have been tasty and refreshing,
but we didn't find it it be so. Perhaps with less/no honey?

Was looking for a different healthy salad. Selected this one. Made is for some high profile foodies during a grilling dinner. It was extremely well received and enjoyed immensely. I have craved it every since and am going back to grab these ingredients to make it again this weekend. Delicious!

A fresh take on a garden salad
I've made this salad four times so far and have got great reviews. I use the lite culinary coconut milk and left out the cashews to save a few calories. This is delicious and has a great crunch it even stays fresh overnight if you need to make it a day early (just leave the dressing on the side). Yummy!
