Cocoa Encrusted Steak with Merlot Glaze (Fresh Flavors Jun '12)
Ingredients
- 1 tablespoon unsweetened cocoa powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 3 teaspoons Anything Goes Spice Rub
- 2 (6 ounce) beef filets
- 4 tablespoons Roasted Garlic Olive Oil, divided
- 1/3 cup Merlot
- 1/2 cup Beef Stock
Preparation
Combine cocoa, salt, pepper and Anything Goes Spice Rub in a bowl and mix well. Transfer spice blend to a large plate and spread around. Brush steaks with 2 tablespoons of olive oil and then press each steak into the spice mixture on both sides, making sure they are completely crusted.
Heat a skillet over medium high heat for 3 minutes, until very hot; add remaining 2 tablespoons olive oil and swirl to coat. Add steaks and sear for 2 minutes on each side. Reduce heat and cook steaks to your desired level of doneness. Remove and set aside.
Remove pan from heat and add wine, scraping up any browned bits from the pan. Add remaining ingredients and combine thoroughly; simmer to reduce for 3-5 minutes until sauce is slightly thickened. Pour over resting steaks and serve immediately.
