Grecian Style Chicken with Tzatziki Sauce (Fresh Flavors April '14)
- Marinade Ingredients:
- 2 tbsp TFM Extra Virgin Olive Oil
- 8 grinds TFM Sea Salt and Black Peppercorn Grinder
- 2 tsp dried oregano
- 1 tsp granulated garlic
- 1 lemon juice and zest
- 1/3 c Rainstorm Pinot Gris
- 1 tbsp Wholesome Sweeteners Organic Fair Trade Sugar
- 4 TFM chicken breasts, boneless & skinless
- Pan Sauce Ingredients:
- 2 tbsp TFM Extra Virgin Olive Oil
- 1/4 c Rainstorm Pinot Gris
- 1/2 lemon juiced, reserve remaining half for SooFoo Tabouleh recipe
- 2 oz crumbled feta cheese
- 1 pkg LeGrand Tzatziki Sauce, found in our dairy department
Combine all ingredients for marinade is a large plastic bag. Allow chicken to marinade for at least 30 minutes and up to 2 hours.
Heat a large skillet over medium high heat for 2 minutes. Add olive oil and swirl to coat. Remove chicken from marinade and allow to drain of excess liquid. Sear chicken for 2 minutes on each side until deep golden brown. Remove to a plate and set aside. Remove skillet from heat and add wine and lemon juice. Return skillet to heat, scraping up any browned bits from the bottom of the pan. Return chicken to pan and cook until it reaches an internal temperature of 165°. Slice chicken on the diagonal and place on serving platter. Pour pan sauce over top and sprinkle with feta cheese. Squeeze Tzatziki Sauce over chicken or serve in a bowl on the side for dipping. Serve warm along with SooFoo Tabouleh Salad.
Great Blend of Flavors
This was like taking a chicken gyro and making it gourmet! I fixed as directed with 2 changes - I used White Cooking Wine because it was what I had and I put fresh diced tomatoes on top right before serving! This will be made again and again in our house. I also served it with pita bread that was brushed with olive oil and fresh garlic and toasted until slightly crisp and a side of couscous. DELICIOUS!!

This is so easy and has so much flavor! It took me almost 30 years to get my husband to eat chicken and he loved this recipe. Please give it a try with pearl cuscous as a side. You won't regret it!

Due to husband getting wrong wine it was different taste than was going for but even with that it was delicious, will Def try again with right wine:)

Delicious & Innovative
This dish was a huge hit! Very easy to prepare (I used sauvignon blanc as that was what I had). The SooFoo tabouleh was the perfect side & also a breeze to make. Surprisingly, my husband loved this as he does not like tabouleh. We even had enough for leftovers which we enjoyed as much as we did the first night!

I am Greek and I made this recipe exactly as written, and it was fantastic. I even used the tzatziki they recommend and it was great. My husband has even been asking me to make it again!!

Cooked this last night, and it was amazing! Used our own Pinot and made our own Tzatziki sauce, but we followed the rest of this recipe followed exactly. Do yourself a favor and try it...you will not be disappointed

Oh my, this was easy and so delicious. Made the SooFoo Taboyleh salad (served room temp) as well. A delightful dinner. I used a very inexpensive Pinot Grigio by Rex-Golliath. Fantastic. Will make both recipes often. Wonderful spring/summer fare.
