Mama's Ugly Apple Cake
- 3 large eggs
- 8 ounces cream cheese, softened
- 2 cups sugar
- 4 teaspoons butter, softened
- 1 cup vegetable oil
- 2 cups confectioners sugar
- 2 cups + 1 teaspoon all purpose flour
- 1 teaspoon lemon juice
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1 cup walnuts, chopped
- 1 teaspoon vanilla extract
- 4 cups apples, thinly sliced
Preheat oven to 350º. Butter and flour a Bundt pan. In a large bowl, beat eggs with an electric mixer until frothy. Add sugar and beat until sugar is dissolved. Add oil and stir to combine.
In a separate bowl, combine 2 cups flour, baking soda and cinnamon; add egg mixture.
In a plastic bag, toss walnuts in 1 teaspoon flour. Add walnuts and vanilla to batter; stir until incorporated. Spread 1/2 of the apples on the bottom of pan, pour 1/2 the batter over apples and repeat with remaining apples and batter. Bake 1 hour and 15 minutes or until a toothpick inserted in the middle comes out clean. Remove cake from pan and allow to cool completely before adding icing.
While cake is cooling, beat together cream cheese and butter until fluffy. Gradually beat in confectioners? sugar followed by lemon juice. Spread icing evenly over cooled cake.
