Prosciutto and Mozzarella Flatbread Pizza (Fresh Flavors Sept '13)
- 3 tbsp. extra virgin olive oil, divided
- 1 piece The Fresh Market Bakery Flatbread or Pita
- 3 slices Prosciutto, roughly chopped
- 1 whole Mozzarella ball, sliced
- 1 c. arugula, torn into pieces
- small red onion, thinly sliced
- salt and pepper, to taste
Heat a large skillet over medium heat for 2 minutes. Add 1 tbsp. of extra virgin olive oil and swirl to coat. Add flatbread or pita and heat for 1 minute per side until it is warm and the edges are brown. Place on a serving plate, cover with foil and set aside. Add 1 tbsp. of olive oil to same skillet and cook prosciutto until crispy, 1-2 minutes.
Assemble pizza: drizzle flatbread or pita with remaining tbsp. of olive oil. Layer mozzarella slices over, sprinkle with crispy prosciutto, and top with arugula and red onion. Season with salt and pepper, and serve immediately.
made this for a luncheon for two ladies. I'll never like "other pizzas as well" after this one and I LOVE to see videos how to make things like you did this. Thank you

This was delicious. Made it with pre-made pizza dough and used shallots instead of red onion for a milder taste. One thing to note- if you use salted mozzarella it won't likely need any extra salt added at the end because the prosciutto is also salty in flavor.
