SooFoo Tabouleh Salad (Fresh Flavors April '14)
- 1 pkg SooFoo Original Grains, cooked to package directions
- 1 pint cherry tomatoes, halved
- 1 bunch fresh Italian parsley , chopped
- 1 medium garlic clove, minced
- 1 medium Hothouse or English Cucumber, diced
- 1 1/2 medium lemon juice
- 1/3 c TFM Extra Virgin Olive Oil
- 6 grinds TFM Sea Salt and Black Peppercorn Grinder
Place all ingredients in a large serving bowl. Toss thoroughly to combine. Can be served warm or made ahead and served chilled.
Serve along with Grecian Style Chicken with Tzatziki Sauce
Pairs perfectly with Rainstorm Pinot Gris or Pinot Noir
Was really excited to try this. Cooked SooFoo according to package directions and it came out a pile of mush. I then referred to my usual Tabouleh recipe that calls for barley. I will stick with my recipe as it has more flavor.

too much oil
I think this recipe had way too much oil. Otherwise, I liked it. I'll cut the oil in half next time.

Awesome Healthy Dish!
I too served this with the Grecian Style Chicken with Tzatiki Sauce. It was very easy to make and tasted great! I served it warm with dinner and had cold leftovers the next day. It tasted great both warm and cold!

To really authenticate this, add, chopped fresh mint... Scout 1/3 cup more or less. This tastes best when you let it set for several hours to marry the flavors best.

Delicious light dish
Light dish for spring or summer. Great side dish for chicken or shrimp. Great that you can make it ahead. A good dish to take to a picnic.

Wow! We eat SooFoo somewhat frequently but are always looking for more. Came across this one and we love it! An Italian salad with SooFoo is perfect! Thanks for sharing this!

My first review ever!
Prepped all vegetables, herbs and other ingredients while SooFoo was cooking. When SooFoo was ready, mixed all ingredients gently, using 1/4 c oil. As always, tasted to tweak seasoning and could.not.stop.eating.
Flavorful yet delicate. Excellent!
I am making the Grecian Style Chicken with Tzatziki Sauce later tonight. Will post tonight or tomorrow regarding outcome.
