Spiced Beef Tenderloin Steaks with Mango Salsa
Ingredients
- 1 cup raspberry preserves
- 1 1/2 tablespoons paprika
- 3 tablespoons lime juice, freshly squeezed
- 1 tablespoon coriander
- 2 mangos, peeled, pitted & cubed
- 2 teaspoons fresh thyme, chopped
- 1/2 cup coconut, shredded
- 2 teaspoons garlic, minced
- juice and zest of 1 lime
- 1 teaspoon chili powder
- 1 jalapeño pepper, minced
- 2 teaspoons Demerara sugar
- 1/8 cup fresh cilantro, chopped
- olive oil
- 1 beef tenderloin, cut into 1-inch thick slices
Preparation
Whisk together raspberry preserves and lime juice in a large bowl. Add mangos, coconut, lime zest and juice, jalapeño and cilantro. Cover and chill up to 2 hours.
Preheat grill to medium-high. Combine all Spiced Rub ingredients except beef in a small bowl. Brush each steak with olive oil then sprinkle with Spiced Rub and gently massage into meat on both sides. Grill steaks to desired doneness, about 5 to 6 minutes per side for medium rare. Remove steaks from grill and allow meat to rest for 5 minutes. To serve, garnish with Mango Salsa.
