Spiced Honey Porterhouse Steaks
- 1 teaspoon ground ginger
- 1 teaspoon ground coriander
- 1 tablespoon paprika
- 1 teaspoon peppercorns
- 2 cloves of garlic, chopped
- 2 tablespoons black sage honey
- 1/4 cup butter
- 4 porterhouse steaks
- 8 teaspoons olive oil
- salt and pepper, to taste
Combine ginger, coriander, paprika, peppercorns, garlic, honey and butter in a small saucepan over medium-low heat. Cook until butter is just melted; combine well, remove from heat and set aside.
Preheat grill to high heat. Drizzle each steak with 2 teaspoons of olive oil over both sides. Brush each with herb-butter glaze just before placing on the grill. Reduce grill heat to medium and cook steaks 3 to 4 minutes on each side (or until desired doneness). Baste frequently with butter mixture for maximum flavor.
Remove steaks from heat, brush with herb-butter mixture and sprinkle with salt and pepper to taste; allow the steaks to rest for 5 minutes before serving.
