Standing Rib Roast

Ingredients 

  • 1 standing rib roast
  • salt and pepper, to taste
  • garlic
  • 2 tablespoons vegetable oil

Preparation 

Preheat oven to 350°. Sprinkle the roast with salt and pepper. Place the meat on a rack in a heavy roasting pan and brush or rub with oil. Drop slivers of garlic into roast. Depending on size, roast for approximately 2 1/2 - 3 hours (see chart below). Transfer to a carving board, cover with aluminum foil, and let stand for 10 minutes before carving.

6-8 pounds (2-4 ribs)

Medium Rare: 130° (internal temp) - 2 1/4 - 2 1/2 hours

Medium: 135° (internal temp) - 2 3/4 - 3 hours

On average, temperature will rise 5° after removing from oven to reach Medium Rare (135°) and Medium (140°).

8-10 pounds (4-5 ribs)

Medium Rare: 130° (internal temp) - 2 1/2 - 3 hours

Medium: 135° (internal temp) - 3 - 3 1/2 hours

On average, temperature will rise 5° after removing from oven to reach Medium Rare (135°) and Medium (140°).
