Steak with Ale Onions and Bacon BBQ Glaze (Fresh Flavors July '12)
Ingredients
- 1 1/2 pounds flank steak
- salt and cracked black pepper, to taste
- 2 tablespoons Olive Oil
- 3 slices Applewood Smoked Bacon, chopped
- 2 yellow onions, thinly sliced
- 1 bottle of Brooklyn Summer Ale or New Belgium Somersault Ale
- 1/2 cup TFM Smokey BBQ Sauce
Preparation
Season steak with salt and pepper. Grill on preheated hot grill with lid closed for 6 minutes on each side for medium rare. Remove steak to a cutting board and cover with foil. Heat a skillet over medium high heat for 2 minutes. Add olive oil and swirl to coat. Add bacon and cook until crispy and fat is rendered. Add and cook onions until translucent, about 5 minutes. Remove pan from heat and slowly pour beer over onions and bacon. Return pan to heat and allow liquid to reduce, about 3 minutes. Add TFM Smokey BBQ sauce and stir into mixture. Slice steak into thin diagonal slices and serve with the onion, bacon and beer glaze on top. Serves 4.
*This can be done with a grill pan on a stove top using the same method covering the pan with foil.
