Sweet Potato, Kale & Chorizo Stew
- 2 tbsp TFM Olive Oil
- 1 medium onion, diced
- 2 medium sweet potatoes, skin scrubbed and cubed
- 1 tsp Salt and pepper to taste
- 2 links Chorizo sausage, sliced in half moons
- 1 bunch Lacinato Kale, stems removed and leaves chopped, about 3 c
- 1 tsp, each TFM smoked paprika, turmeric, and cumin
- 1 pkg Freekeh Original Roasted Grains
- 1/2 c A to Z Pinot Gris
- 2 14.5 oz cans Muir Glen Fire Roasted Diced Tomatoes
- 4 c TFM Chicken Stock
In a large stockpot, add olive oil and heat over medium high for 2 minutes. Add onions and sweet potatoes. Season with salt and pepper and cook until vegetables begin to soften, about 5 minutes. Add chorizo and continue to cook until it begins to brown, about 5 minutes. Add kale, spices, and Freekeh; stir to thoroughly combine.
Remove pot from heat and add wine, scraping up the browned bits from bottom. Add tomatoes and stock. Once stew comes to a boil reduce heat to medium low and simmer until sweet potatoes are fork tender and Freekeh is cooked through, about 25 minutes. Serve warm.

barley, brown rice, orzo, ...any kind of grain is wonderful.

It was delicious. I put in more kale and sweet potatoes and added a little cayenne for some heat. Added red pepper to mine because my wife doesn't like spicy

This is a modified version of the Portuguese recipe for "Caldo Verde". It came out nice but I prefer the original recipe... Simple and healthy!

I tried a sample of this in the store and had to make it. I followed the recipe for the most part but improvised with some alternate ingredients (chipotle chicken sausage, added carrots, added crushed red pepper for some heat). It turned out amazing! Everyone went in for second helpings..some even thirds!

Made this for my family, and mom isn't very fond of spices, I Substituted the chorizo for Sweet Italian Sausages. Used Pinot Grigio instead of Gris. Rosemary and Sage Freekeh because that was all TFM had :) It was a great family dinner during this horrible snowstorm, quick and easy to make. Add a loaf of TFMs Three Cheese Foccacia and you are set!

I thoroughly enjoyed this dish! I tried the roasted grains for the first time, and they give an earthy nutty flavor to the stew. Very filling, and comforting on a cold winter day! Served it with some crusty french bread. I will definitely make this again.
