Thom's Spicy Chicken Wings
Ingredients
- 14 chicken drummettes
- 2 tablespoons Dijon mustard
- 2 eggs, slightly beaten
- 1 tablespoon water
- 1 cup plain dry breadcrumbs
- 1 tablespoon lemon pepper
- 1 teaspoon cayenne pepper
Preparation
Preheat oven to 350°. Combine eggs, mustard, and water in a flat dish. In another flat dish toss breadcrumbs, lemon pepper, and cayenne pepper. Wash and thoroughly dry the chicken. Dip chicken in the egg mixture and coat well, and then dredge in breadcrumb mixture to make a thick crust. Bake on a cookie sheet, lightly sprayed with oil, for 45 minutes or until they are browned and cooked through. Serve with blue cheese dressing (see Index) and celery sticks.
