Watermelon Salad with Balsamic Vinaigrette
- 1/4 cup TFM Balsamic Vinegar
- 1/2 cup TFM Olive Oil
- 1 tablespoon TFM Dijon Mustard
- 1 tablespoon honey
- 1 clove of garlic, minced
- salt and pepper, to taste
- 1 medium seedless watermelon, cubed
- 1/2 red onion, thinly sliced
- 3/4 cup fresh mint, chopped
- 8 ounces Feta cheese, crumbled
In a small mixing bowl, whisk together vinegar, olive oil, mustard, honey and garlic. Season with salt and pepper and set aside. Refrigerate until ready to serve.
Spread 2/3 of watermelon on serving platter. Top with onion, mint and cheese and season with pepper.
Pour dressing over salad and garnish with remaining watermelon cubes.
Excellent with grilled shrimp or chicken.
This is now one of our families favorite recipes! It sounds strange and i would have never tried it... but i was in Fresh Market and the chef there was preparing it and serving it to customers. I tried it and was hooked!! Even our 19 year old loves it. My recommendation is to NOT put the dressing all over the salad, but instead have each person put some on their individual serving. Some people have liked alot on their salad and other people have liked just a little bit. If you do put it all over the salad, go lighter than suggested so all guests will enjoy!

Excellent if you want to lighten up only drizzle dressing
Husband thought it was okay but I loved it! Its odd mix of flavors felt like party with for taste buds. I used the dressing sparingly & drizzled lightly on top.

Way too much oil!
Be aware that there's over 900 calories of oil in this salad! To avoid a greasy salad, cut the oil to half the amount of vinegar, about 2T. That gives 6 servings of oil per recipe. Always remember that a health-wise serving of oil is about a *teaspoon* per person. The salad will taste fresher and cleaner, too.

Made this twice,once with company and once for a cover dish. It was a hit both times and they couldn't believe the favors. Just the kids didn't like it!!! Surprise,not . To them watermelon is watermelon

Amazing summer salad!
The combination of ingredients in this salad may seem strange at first, but the result was an incredibly delicious and refreshing salad.
I would not use canola oil in the dressing, olive is much better. However, I ate it WITHOUT dressing and it was perfect!

Got rave reviews
I tried this for a luncheon the other day. It made a great visual presentation. The combination of flavors made the dish surprising and really flavorful. This will be added to my smash summer recipes.

The freshness of the watermelon and mint, tang of the onion and dressing along with the creaminess of the cheese make this a great salad. I put over watercress and it was divine. I highly recommend a good quality sheeps milk feta.

Excellent balance of flavors
Great accompaniment to rich and full flavored dishes. I served it yesterday at lunch with bean and barbecued beef enchiladas. Be careful not to dress salad until last minute as the watermelon waters it down quickly.
