White Truffle Porcini Pasta (Fresh Flavors Nov. '13)
- 1 lb TFM Torcetti Pasta, cooked according to package directions and drained
- 1 Can Urbani White Truffle and Porcini Thrills Sauce
- 1/4 Cup Parmesan cheese, grated
- 1 tsp Fresh cracked pepper
Pour Urbani sauce into a medium saucepan and simply heat on medium low until warmed through, about 1 to 2 minutes. Add cooked pasta, toss to coat and place on a serving platter. Sprinkle with grated parmesan cheese and season with fresh cracked pepper. Serve immediately.
Over Priced Cream of Mushroom Pasta
I agree with the needing to double the can of truffle sauce since (1) can would not be enough. However, this makes the dish much more expensive and for what we got it just wasn't our flavor. Probably won't try this one again.

Great with little adjustments
I tried this sauce myself months ago, but I had added 1 can of tomatoes. I found that the tomatoes allowed the truffle mixture to shine but it helped to also give another flavor that complimented the truffles.

Sounds better than it tastes
I was skeptical about using the one small can of truffle sauce for the entire amount of pasta, but the review before me expressed that it would be enough. I thought it had sort of a bland taste. I even added a wild mushroom mix to add some more substance. My advice: Purchase more than one can of sauce (~$10) to allow more flavor and sauce for the pasta. I would make this again with a few revisions.

I was a little skeptical about the small can of the Porcini Thrills sauce covering a 1 lb. bag of pasta, but it worked out just great! The flavor was awesome. I did chop up half a lb. of mushrooms and cooked until well browned and added it to the pasta when mixing all together. That was a very nice added touch. Served this dish with an arugula salad with a lemon vinegarette dressing. The pasta even tasted better the second day.
