Grilled Halloumi Salad with Watermelon and Mint
 

Ingredients:
  • 1/2 large seedless watermelon
  • 3 tablespoons fresh mint
  • 1 pound Halloumi Cheese, sliced into strips
  • freshly ground black pepper


Preparation:

Preheat grill to medium. Meanwhile, dice watermelon into one-inch cubes and toss with the mint. Grill the halloumi until it browns and starts to blister on each side, about one to three minutes per side. Immediately dice the halloumi into cubes and toss in with watermelon and mint. Season with freshly ground black pepper to taste. Serve Immediately.
