Asparagus with Citrus Vinaigrette
 

Ingredients:
  • 3/4 ounce TFM fresh tarragon
  • 1 bunch asparagus (thin to medium)
  • 1 1/2 gallons boiling water, salted
  • 1/4 teaspoon chili flakes
  • zest of 1 lemons
  • zest of 1 limes
  • zest of 1 oranges
  • 1/4 cup TFM Olive Oil
  • 1/2 teaspoon salt
  • ice water (for asparagus)


Preparation:

Blanch asparagus in boiling water for 1 ½ to 2 minutes (depending upon thickness). Once cooked, submerge in ice water until cool, about 2 minutes. Add remaining items together and pour over drained asparagus. Serve chilled or at room temperature.
