Preheat griddle over medium heat and coat with cooking spray.
In a medium bowl, combine flour, salt, baking powder, sugar and apples.
In a separate larger bowl, combine milk, egg whites, applesauce, vanilla extract and pumpkin pie spice. Pour dry ingredients into wet ingredients and stir to combine. Pour ¼ cup batter at a time onto griddle; cook for 3 minutes. Once the sides and top of pancake begin to bubble, flip and cook another 3 minutes.
To serve, place pancakes on a serving dish and sprinkle with walnuts, maple syrup and a dollop of whipped cream.
