Baked Potatoes Stuffed with Crabmeat

Ingredients

  • 6 baking potatoes
  • 6 oz. crab meat
  • ½ c. half and half
  • 2 tbsp. butter, melted
  • salt and cayenne pepper, to taste
  • 1 onion, grated
  • 8 oz. cheddar cheese, freshly grated

Directions

Preheat oven to 375°. Pierce each potato several times with a fork and bake for 45 to 60 minutes. Remove potatoes from oven and cool slightly. Cut each in half and scoop out insides, leaving skins intact and set aside.

Reduce oven to 350°. To make the potato filling, add crabmeat, half & half, butter, salt, cayenne pepper and onion and whip until smooth. Return potato mixture to potato shells and top with cheese. Bake for 30 minutes or until cheese is bubbly.
