Coconut Mashed Sweet Potatoes

Ingredients

  • 1 tbsp. sugar
  • 2 lbs. sweet potatoes, peeled and sliced
  • ½ tbsp. salt
  • pinch of pepper
  • ½ can coconut milk
  • ½ c. coconut flakes, toasted

Directions

In a medium saucepan over low heat, combine sugar and sweet potatoes and cook for 35 to 45 minutes. Stir occasionally and sauté until potatoes fall apart when pierced with fork.

Remove potatoes from heat, add salt and pepper and mash with electric mixer. Fold in coconut milk and garnish with toasted coconut before serving.
