Roasted Fingerling Potatoes

Ingredients

  • ½ lb. White Fingerling Potatoes
  • ½ lb. Purple Fingerling Potatoes
  • ½ lb. Red Fingerling Potatoes
  • 3 tbsp. extra virgin olive oil
  • 2 tbsp. The Fresh Market Signature Rub

Directions

Preheat oven to 425°F. Wash and pat dry potatoes. Cut into 1 to 1¼-inch pieces. Place potatoes, oil and rub into a large bowl and toss to coat. Single layer the potatoes on a baking sheet. Use several sheet pans if necessary in order to cook in a single layer. Bake for 45 minutes to 1 hour or until fork tender.
