- 2 lb Market Style Bacon
- 1 loaf The Fresh Market Sliced Brioche
- Iceberg Lettuce
Preheat oven to 400°F. Place two wire racks over two sheet pans lined with foil and lay bacon slices over racks. Bake for about 15-25 minutes or until bacon is crisp, rotating pans halfway through. Let bacon cool over paper towels until ready to use.
Arrange the top oven rack so it’s just under the broiler. Heat broiler over low. Lay 8 slices of bread on a sheet pan and broil until golden brown on one side (just a minute or two), then flip and continue broiling for another minute or so.
To assemble sandwiches, spread mayo over each slice of bread, top with bacon, tomato slices (sprinkled with salt) and top with lettuce and another slice of bread. Carefully slice in half if desired.
