Preheat the oven to 350*.
In a large oven safe baker, fold mascarpone cheese into the Yukon Gold Whipped Potatoes. Add half of the scallion and the cracked pepper.
Tightly wrap in foil and bake for 30 minutes or until the internal temperature reaches 160 degrees. Before serving, garnish with the remaining scallion and cracked pepper.
