Ingredients

  • 1 tbsp canola oil*
  • Shepherd’s Pie Veggie Kit
  • 1 lb lean ground sirloin or ground turkey
  • 1 tbsp tomato paste
  • 3/4 c Kitchen Basics beef or chicken stock
  • 1 lb Yukon gold mashed potatoes

Preheat oven to 400°F.

Heat oil in a large skillet over medium-high heat. Open the veggie kit, place the seasoning to the side and add the vegetables from the veggie kit to the skillet. Sauté, stirring occasionally, until onions and mushrooms are lightly brown and green beans are slightly tender, about 5-7 minutes.

Add ground meat and 2 tsp seasoning from veggie kit (the veggie kit will contain more seasoning than you need—do not add the entire container). Cook, stirring well and breaking up the meat with a wooden spoon into crumbles, until meat is no longer pink, about 5 more minutes.

Add the tomato paste and stir well to incorporate, cooking 1-2 minutes. Add the 3/4 cup beef or chicken stock and bring the skillet to a strong simmer, cooking 2-3 more minutes.

Pour the contents of the skillet into an 8x8 baking dish or similar sized casserole dish. Spread the whipped potatoes on top of the filling with a spatula to evenly cover the top.

Place the baking dish into the oven and bake for 20-25 minutes, until whipped potatoes are warm and filling is bubbly.

Remove from the oven and let cool for 5 minutes before serving.
