American Potato Salad


  • 2 ½ lb New Potatoes, quartered
  • ¼ c scallions, chopped
  • ¼ c celery, chopped
  • ¼ c pepperoncini
  • ¼ c sweet gherkins, diced
  • ¼ c green relish
  • ¼ c traditional yellow mustard
  • 1 c Hellmann's Mayonnaise
  • Salt and pepper, to taste


Place potatoes in a large pot and cover with cold water. Bring water to a boil, salt the water and boil potatoes until tender when pierced with a fork, about 15 minutes. Drain and cool in the refrigerator, about 20 minutes. Meanwhile, in a large bowl, add all remaining ingredients and stir gently until well blended. Once potatoes are cool, add them to bowl with rest of mixture and gently fold them in with a spatula until the mixture is evenly distributed. Serve immediately or chill further if desired.
