
Ingredients
- 1 ¾ c. all purpose flour
- ¾ c. sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- ½ tsp. salt
- 1 large egg
- ¾ c. vegetable oil
- ½ c. plain yogurt
- 1 tsp. vanilla extract
- 1 c. banana, mashed
- ¾ c. semi sweet chocolate chips
Directions
Preheat oven to 350º. In a large bowl, combine flour, sugar, baking powder, baking soda and salt. In another bowl, combine egg, oil, yogurt and vanilla. Stir wet mixture into dry ingredients until just moistened, careful not to overmix. Fold in bananas and chocolate chips.
Fill greased or paper-lined muffin cups 2/3 full. Bake for 22 to 25 minutes or until a toothpick inserted in center of muffin comes out clean. Allow to cool for 5 minutes before removing to wire racks.
