Pulled Pork-Style BBQ Jackfruit Sandwiches

Ingredients

  • 2 tbsp vegetable oil
  • ¾ lb jackfruit arils
  • ½ c white onion, thinly sliced
  • ½ c Lillie’s Q Carolina Barbecue Sauce
  • 1 c purple cabbage, shredded
  • ½ c kale, shredded
  • ¼ c mayonnaise
  • ½ tsp toasted sesame oil
  • ¼ c lime juice, freshly squeezed
  • 2 tbsp sesame seeds
  • ¼ c cilantro, chopped
  • Hamburger Buns

Directions

In a large skillet over medium high heat, add 2 tbsp oil, jackfruit and onions, and sauté for 5-7 minutes, or until the ingredients start to brown. Add bbq sauce and 1 tbsp of water and continue cooking, uncovered, for 10-15 minutes until jackfruit becomes soft in texture.

Remove skillet from heat and transfer jackfruit mixture to a metal bowl. Using two forks, shred jackfruit arils and let rest while preparing the slaw topper.

In a medium bowl, add the mayonnaise, sesame oil and lime juice, and whisk to combine. Then add the cabbage and kale, and massage for 2-3 minutes. Add sesame seeds and cilantro and toss to combine.

Toast the hamburger buns and top with the bbq jackfruit and crispy slaw, serve immediately.
