- 8 oz lemonade
- 1 bottle champagne
8 oz Blueberry Simple Syrup:
- 1 c blueberries
- 1 c sugar
- 1 c water
- 1 tsp lemon zest
Divide simple syrup equally between 4 high ball glasses. Follow with equal amounts of lemonade. Finish by filling each glass with champagne. Garnish with fresh blueberries.
Blueberry Simple Syrup: Combine blueberries, sugar, water and lemon zest in a saucepan over medium heat. Stir to combine and bring to boil.
Once boiling, reduce heat to low and simmer 15 minutes, stirring occasionally. The blueberries will burst and release their liquid.
Remove from heat and allow mixture to cool. Once cooled, strain syrup through a fine-mesh sieve, being careful not to smash the blueberries (will result in cloudy syrup). Store in air-tight container in refrigerator for up to 3 weeks.
