Blueberry Cobbler

  • 6 tbsp. butter
  • 1 c. flour
  • 1 c. sugar
  • 2 tsp. baking powder
  • ½ tsp. salt
  • ¾ c. milk
  • 1 tsp. almond extract
  • 2 c. fruit, (fresh blueberries or blueberry/strawberry mix


Cut up butter and melt in the bottom of an 8”x8” baking dish. In a bowl, sift together flour, sugar, baking powder and salt. Slowly stir milk and almond extract into the dry ingredients until just mixed. Pour batter over the melted butter. Pour fruit on top, spreading across the pan evenly. Bake at 350 for 45 minutes to an hour.
