Cashew Butter Blondies

Cashew Butter Brownies


  • 1½ c all purpose flour
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • ½ c unsalted butter, cut into 1” pieces
  • ½ c The Fresh Market Cashew Butter
  • ½ c granulated sugar
  • ½ c packed light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ c roasted, salted cashews, coarsely chopped
  • 4 oz semi sweet chocolate, coarsely chopped


Preheat the oven to 350º. Whisk together flour, baking powder, and salt in a medium bowl and set aside.

Place butter in a large microwave-safe bowl and heat in the microwave at MEDIUM power in 30 seconds intervals until melted, 1 to 1 ½ minutes total, stirring after each interval. Add cashew butter to melted butter and whisk until smooth. Add both sugars, eggs, and vanilla and whisk until smooth. Sprinkle flour mixture over the cashew butter mixture and fold just until combined. Fold in chopped cashews and chopped chocolate.

Transfer mixture to a lightly greased 8” square pan and bake in preheated oven until a toothpick inserted in the middle comes out clean or with a few moist crumbs attached, 30-35 minutes. Transfer pan to a wire rack to cool in pan for at least 30 minutes before cutting into squares.
