Chicken Cacciatore

Ingredients

  • 3 tbsp olive oil, divided
  • 32 oz boneless chicken thighs
  • kosher salt and freshly ground black pepper
  • 22 oz Cacciatore Veggie Kit
  • 1 tbsp The Fresh Market Italian Seasoning
  • 28 oz can The Fresh Market Italian Tomatoes
  • 1 c The Fresh Market Chicken Stock
  • ½ c pitted olives (optional)

Directions

Heat 2 tbsp olive oil in a cast-iron skillet, dutch oven or large sauté pan on medium-high heat until hot. Season chicken thighs with salt and pepper and sear until golden brown, 3-4 minutes total. Remove chicken to a plate.

Add the remaining 1 tbsp oil to the skillet along with the veggie kit and Italian seasoning. Sauté until vegetables are tender and fragrant, 5-7 minutes. Add the chicken back to the skillet, along with the tomatoes, chicken stock and olives, if using. Bring to a simmer and then turn the heat down to medium-low, simmering for 20 minutes until chicken is tender.

Serve warm over Yukon Gold mashed potatoes.

For Yukon Gold mashed potatoes: Oven: Preheat oven to 350°F. Place potatoes in an oven-safe container, cover with foil and bake for 15-25 minutes until potatoes are warmed through.

Microwave: Place potatoes in microwave safe container and heat on high setting for 2.5-3 minutes until potatoes are warmed through.
