
Ingredients
- 5 tbsp mayonnaise
- ¼ c Maya Kaimal Madras Curry sauce
- 2 tbsp apricot jam
- 2 tbsp lime juice, from 1 lime
- 1 tsp kosher salt
- 4 c rotisserie chicken meat, finely chopped, from one rotisserie chicken
- ¾ c celery, finely chopped
- ⅓ c green onions, chopped, from 1 bunch
- ¼ c cilantro, chopped and loosely packed
- 16 slices thin-sliced bread, such as Pepperidge Farm Very Thin White Sliced Bread
- 8 leaves green leaf lettuce, from one bunch
Directions
Stir together mayonnaise, curry sauce, apricot jam, lime juice and salt in a medium bowl. Add chicken, celery, green onion and cilantro and fold to combine. Top 8 slices of bread with about 1/2-cup scoop of chicken salad and spread to the edges. Top with one leaf of lettuce and remaining bread and cut into triangles.
