- 12 oz Fetalia Feta cheese
- ¾ c buttermilk
- 3 tbsp fresh lemon juice
- 1 c parsley, roughly chopped
- ½ c tarragon leaves
- 3 green onions, roughly chopping
- 2 tbsp lemon zest
- Kosher salt and freshly ground pepper
- Olive oil, for serving
Combine feta, buttermilk and lemon juice in a food processor and process until smooth. Add parsley, tarragon, green onions and lemon zest, and continue to pulse until mixture is smooth but flecks of herbs are still visible. Taste and season with salt and pepper as needed.
Cover and chill at least 1 hour before serving. To serve, transfer to a bowl and drizzle with olive oil.
