
Ingredients
- 10 mini cucumbers, sliced (or 3 English Cucumbers, halved lengthwise, deseeded and sliced)
- 3 avocados, diced
- 8 oz feta, fresh and crumbled
- 3 scallions, thinly sliced
- 1 bunch fresh dill, chopped
- ½ bunch fresh parsley, chopped
- ½ c fresh lemon juice, about 4 lemons
- 2 tbsp TFM extra virgin olive oil
- Salt and pepper, to taste
Directions
Gently toss all ingredients in a large bowl. Adjust seasoning with lemon juice, salt and pepper to taste. Keep chilled until ready to serve.
