
Ingredients
- 1 rotisserie chicken, meat pulled and shredded into bite sized pieces (about 1 lbs)
- 1 jar Ya Oaxaca Mole Coloradito sauce
- Cooked rice
- tortillas for serving
- Avocado, cilantro, pickled red onion, sour cream, pomegranate arils and/or lime wedges for garnish, optional
Directions
Shake the mole sauce well and pour into a medium saucepan.
Add ½ c water to the jar, screw on the lid, shake well again and pour jar contents into saucepan.
Add the shredded chicken to the mole sauce, stir well and heat over medium heat until warmed through, about 10 minutes.
Serve over rice with tortillas on the side, and garnish with avocado, cilantro, pickled red onion, sour cream and lime wedges as desired.
