
Ingredients
- 2 lbs ground turkey or chuck
- 12 oz fresh or frozen cauliflower rice
- 1 tbsp garlic powder
- Ground black pepper and salt, to taste
- 6 large bell peppers, any color
- 25 oz marinara sauce
- Shredded mozzarella, optional
Directions
Preheat oven to 350°F.
Meanwhile, heat a large, heavy-bottomed pan over medium-high heat and add the ground meat. Cook until brown, breaking up with a wooden spoon, 7-10 minutes. Remove meat from pan into a bowl and set aside. If using ground chuck, drain excess fat and discard. Return pan to medium-high and add the cauliflower rice and garlic powder, seasoning to taste with salt and pepper. Cook until slightly browned and tender, 5-10 minutes. Add the cooked cauliflower rice to the meat and stir well until thoroughly combined.
Cut off the tops of the bell peppers and remove the ribs and seeds with a spoon or knife. Arrange peppers in an oven-safe baking dish and evenly fill each pepper with the meat and cauliflower rice blend. Divide marinara sauce evenly over the peppers with a spoon and top with optional mozzarella cheese. Bake for 35-45 minutes or until desired bell pepper tenderness.
