
Ingredients
- 6 slices of foccasia or good quality rustic bread
- 1 pint grape tomato, quartered lengthwise
- ⅓ c. olive oil
- 8 large fresh basil, torn
- salt and pepper, to taste
- 4 cloves of whole garlic bulbs, peeled
- Parmesan cheese (optional)
Directions
Preheat oven to 350°. Lay bread on a baking sheet and lightly drizzle with olive oil. Place in oven for about 5 minutes or until edges are brown. In a mixing bowl, combine tomatoes, oil, basil and salt and pepper. When bread is toasted, lightly rub the top of bread with garlic. Spoon room temperature tomato mix over warm bread and serve.
Parmesan cheese can be sprinkled atop bruschetta for extra flavor.

Being Italian, we don’t sprinkle the Parmesan but another option is to make a very thin lattice of Parmesan and place it atop of the toasted bread and then place the tomato mixture. We also sometimes mince one clove of garlic into the mixture, depending how much you’re making.
