
Ingredients
- 1 whole pineapple, peeled, cored and cut into even 1” chunks
- 2 tbsp coconut oil, for brushing
- 1 tbsp Hot Honey
- 1 tsp lime juice
- 1 tsp soy sauce
- 1 clove garlic, minced
- 1 cup plain coconut yogurt
- Zest from 1 lime
- Garnish with fresh mint and toasted coconut flakes
Directions
Preheat grill or grill pan to medium high.
In a small bowl, whisk together hot honey, lime juice, soy sauce and garlic for the glaze.
Stack pineapple chunks onto skewers and brush lightly with oil.
Grill 2-3 minutes per side. When the pineapple is mostly grilled, brush with hot honey glaze and grill for a final 1-2 minutes.
Whisk together coconut yogurt and lime zest.
Serve grilled pineapple over coconut yogurt and top with a final drizzle of hot honey, fresh mint and toasted coconut flakes.
