Grilled Pineapple Kabobs With Hot Honey Glaze and Coconut Yogurt

Ingredients

  • 1 whole pineapple, peeled, cored and cut into even 1” chunks
  • 2 tbsp coconut oil, for brushing
  • 1 tbsp Hot Honey
  • 1 tsp lime juice
  • 1 tsp soy sauce
  • 1 clove garlic, minced
  • 1 cup plain coconut yogurt
  • Zest from 1 lime
  • Garnish with fresh mint and toasted coconut flakes

Directions

Preheat grill or grill pan to medium high.

In a small bowl, whisk together hot honey, lime juice, soy sauce and garlic for the glaze.

Stack pineapple chunks onto skewers and brush lightly with oil.

Grill 2-3 minutes per side. When the pineapple is mostly grilled, brush with hot honey glaze and grill for a final 1-2 minutes.

Whisk together coconut yogurt and lime zest.

Serve grilled pineapple over coconut yogurt and top with a final drizzle of hot honey, fresh mint and toasted coconut flakes.
