- ¼ c extra virgin olive oil
- 2 tbsp lemon juice, freshly squeezed
- 1 tbsp poultry rub
- 1 tbsp fresh thyme
- 4 boneless, skinless chicken breasts
Combine olive oil, lemon juice, poultry rub and fresh thyme in plastic bag. Add chicken and allow to marinate a minimum of 1 hour and up to 3.
Preheat oven to 400˚F. Place chicken and marinade in baking dish. Bake 30-40 minutes, basting halfway through, until chicken is brown and an internal thermometer reads 165˚F.
