
Ingredients
- 1 small green bell pepper, diced
- 1 small red bell pepper, diced
- 1 small yellow bell pepper, diced
- ½ small yellow onion, diced
- ⅓ c extra-virgin olive oil
- ⅓ c distilled white vinegar or apple cider vinegar
- ¼ c chopped fresh cilantro
- 1 tsp kosher salt
- 1 tsp freshly ground black pepper
- 10 oz semisoft white cheese, such as queso fresco, cut into ½-inch cubes
- 1 baguette, sliced, or crackers, for serving
Directions
In a large jar, combine the bell peppers, the onion, olive oil, vinegar, cilantro, salt, and black pepper. Cover tightly and shake vigorously until well combined.
Place the cheese cubes in an airtight container and pour the marinade over the top. Cover and marinate in the refrigerator for at least 8 hours or overnight.
Serve with a sliced baguette or crackers.
