Ingredients

  • Matzah
  • Extra Virgin Olive Oil
  • Feta Cheese
  • Artichoke Hearts, drained and quartered
  • Olives, sliced or torn
  • Parsley, coarsely shopped
  • Lemon, zested and halved
  • Parmigiano, grated

Directions

Preheat Oven to 400°F and line a baking sheet with parchment paper.

Brush Matzah generously with olive oil. Arrange artichoke hearts, olives, lemon zest, feta cheese and parmigiano on top of matzah.

Bake 3-4 minutes. Top with fresh parsley and lemon juice when it comes out of the oven.
