Nectarine Salsa

Ingredients

  • 2 medium nectarines, about ¾ lbs, finely chopped
  • ½ medium shallot, minced (about 2 tbsp.)
  • ¼ c. torn cilantro leaves
  • ¼ c. fresh lime juice (about 2 small limes)
  • ½ tsp. granulated sugar
  • ⅛ tsp. smoked paprika
  • ¼ tsp. kosher salt
  • ¼ tsp. ground pepper
  • baguette, cut into rounds
  • 6 oz. soft cheese, for serving

Directions

Stir all ingredients together in a small bowl. Let stand at room temperature at least 30 minutes or up to 2 hours. Serve with toasted baguette rounds and your favorite soft cheese, such as Goat or Brie.
