
Ingredients
- ½ lb dry pasta (any shape)
- 2 c broccoli florets
- ⅓ c vegetable oil, divided
- 1 lb boneless, skinless chicken breasts, cut into 1-in pieces
- ¼ c all-purpose flour
- 3 c milk
- ½ c smoked gouda, shredded
- ½ c sharp cheddar, shredded
- Salt and pepper
Directions
Bring a large pot of salted water to a boil and cook the dry pasta according to the package instructions. During the last 3 minutes of pasta cooking, add the broccoli florets to the boiling pasta water. Drain the pasta and broccoli into a colander and reserve.
Return the pot to medium high heat and add 2 tbsp oil and the chicken. Cook chicken until edges are brown and center is cooked through, about 7-8 minutes. Transfer to a plate and cover while preparing the sauce.
Return the pot to medium high heat and add the remaining vegetable oil and flour. With a spatula or spoon, cook the flour and oil for 1-2 minutes, stirring constantly to prevent burning. Add all of the milk to the pot and quickly whisk to combine, scrapping along the bottom and sides of the pot to prevent lumps from forming.
Once the sauce comes to a boil, reduce to a simmer and cook for 5-6 minutes, stirring occasionally. Add milk in tablespoon increments if the sauce thickens too fast. Whisk the cheeses into the sauce in batches, making sure all of the cheese completely melts between additions.
Add the pasta and chicken to the sauce and fold the ingredients together to thoroughly cover. Season with salt and pepper, to taste. Portion into warm bowls and serve immediately.

Love a one pot wonder!
Recipe was somewhat lengthy for a one pot and lacked flavor.
Turned out great! I used gluten free noodles and flour and I seasoned with garlic salt and white pepper. Delicious!

Not sure if I did something wrong but it never really thickened up. I used almond milk instead of cow's milk and added more cheese than It called for. It still tasted very good tho.

I really love how simple and easy this recipe is! There is so much than you can add to this to make it your own. I added more spices because the recipe didn’t have any and I seasoned my chicken. I would recommend this everyone I know, it’s delicious!!

I subbed 1/2 cup of heavy cream for1/2 cup of milk, but I did everything else the same. Next time I will use a separate pot for the roux. The macaroni had more chicken flavor than cheese flavor and I love smoked Gouda! This is the first mac and cheese recipe I've seen that calls for Gouda. I really appreciate the recipe. Thanks!
Simple recipe but delicious!!
Was really looking forward to making this. Plain old mac and cheese can be so boring. I also liked the broccoli addition. However, guess I have spicier tastes because this just didn't do it for me, even with smoked gouda which I normally love! I think next time I'd add some cayenne which I find goes well with cheese.

Easy and delicious! Tastes like a combo of Pasta Alfredo and Mac and Cheese with broccoli and chicken added. Because of the broccoli, it tastes healthier than either Alfredo or Mac and Cheese!
This was good and easy I didn’t make cheese sauce instead I bought premade sauce from the store. But not a velveeta it was a truffle aged cheddar cheese sauce and it saved tons of time cooking plus added the flavor without me having to season it.

Quick recipe for a complete balanced meal! I used olive oil instead and added some roasted peppers I made for color and flavor. As we say, it was “very gouda!”

Easy to make with most ingredients on hand minus the fresh chicken from The Fresh Market. I'm coming in today for more since it is Tuesday.
This recipe was expensive to make and unfortunately ended up being bland and a little lengthy for a “one pot” meal. I would not make again.
