
Ingredients
- 1 pkg. Artisan Penne Pasta
- 1 small yellow onion, finely chopped
- 4 cloves of garlic, minced
- 4 plum tomatoes, chopped
- 1 small red bell pepper, chopped
- ½ c. Kalamata olive, sliced
- 1 c. balsamic vinegar
- 1 large Mozzarella Ball, cubed
- ½ c. fresh basil leaf, torn into medium size pieces
- salt and pepper, to taste
Directions
Cook pasta according to package direction. Rinse with cold water.
In a large bowl, combine pasta, onion, garlic, tomatoes, red peppers and olives. Add balsamic vinegar and mix well to coat all ingredients. Gently fold in mozzarella and basil. Season to taste with salt and pepper.
