Prepare the garnishes by washing and coring the Pineberries and using a vegetable peeler to thinly slice the cucumber. In a shaker, muddle three Pineberries, a slice of cucumber and simple syrup. Add the gin, ice and rose lemonade and shake until well-chilled. Press the cucumber to the inside of a Collins glass, then pour the cocktail into the glass, straining if desired. Garnish the glass with a single Pineberry.
