
Ingredients
- ¼ c whole grain mustard
- 2 tbsp Dijon mustard
- 2 tsp extra virgin olive oil
- 2 tbsp fresh dill, chopped finely
- 4 (6 oz) salmon fillets, skin on
- Kosher salt and freshly ground pepper
- Lemon, cut into wedges, for serving
Directions
Preheat oven to 400°F and line a rimmed sheet pan with aluminum foil.
In a small bowl, whisk together the mustards, olive oil and dill. Season salmon fillets with salt and pepper and place skin side-down on sheet pan. Spread mustard mixture over the fillets. Roast salmon for 8 minutes, then finish cooking under the broiler until desired doneness, (salmon should have a nice crust on top).
Carefully slide salmon fillets off pan and transfer to plates. Serve with lemon wedges.

Excellent recipe, tastes amazing and so very quick and easy and not a lot of ingredients. The whole mustard seeds add just the right amount of textural pop and the squeeze of lemon at the end tastes so fresh with the dill and mustard. I did bake a little less time (5 min) because I thought broiling at the end might over cook piece (thickness) of fish being used. This adjustment allowed me to broil till there was a good crisp - it was perfect. Also didn't add additional salt because mustards are high salt. Many thanks, this recipe will be a regular at my table. So delicious!

Very pleased :). Few ingredients, quick and easy. Doesn't mask the flavor of the salmon, just adds enhancement. Of course it helps if you like mustard and Dill!! Would recommend.
prepped 1/2 recipe and used on 1 1/4 thick salmon steak. Definitely a make again entree. do not let the salmon go over 115 in the oven.
