
Ingredients
- 2 tbsp extra virgin olive oil
- 1 lb sirloin steak strips
- Kosher salt and freshly ground black pepper
- 1 lb mixed greens
- 1 Salad Topper Veggie Kit
- 4 oz crumbled blue cheese
- 1 bottle balsamic vinaigrette
Salad Topper Veggie Kit:
- 1 c broccoli florets
- 1 c grape tomatoes
- 1 c green pepper, sliced into rings
- 1 c baby peeled carrots
- ½ c white mushrooms, sliced
- ½ c red onion, diced
Directions
Heat oil in a large skillet over medium-high heat until it shimmers. Add steak, season with salt and pepper and cook on all sides until lightly pink, 6-8 minutes.
Meanwhile, place salad greens and Salad Topper Veggie Kit in a large mixing bowl.
When steak is done, add to mixing bowl with greens and vegetables.
Pour half a bottle of dressing over salad mixture and toss with tongs to thoroughly combine. If mixture seems a little dry, add more salad dressing to taste.
Sprinkle blue cheese over the salad mixture and serve.

Loved it!! Loved it!! Loved it!!! The only thing I don't love involving this recipe is that it hasn't came back around on the Lil big meal.. Lol but seriously my favorite hands down!!!!
This was a delicious combination of colorful and healthy foods. However, the sirloin steak strips were a little tough since they were cooked on the stove. I'd recommend grilling them and adding them to the recipe, then this would make this perfect!!
