
Ingredients
- 2 large English Cucumbers
- 1 tsp kosher salt
- ½ The Fresh Market Rotisserie Chicken
- ¼ c Primal Kitchen No Soy Teriyaki Sauce & Marinade
- 4 c mixed greens
- 1 c farro
- ½ c cilantro
- 2 tbsp sesame seeds
Directions
Use the flat side of a wide blade knife, smash the cucumber, pressing firmly down until it crunches open. Chop the smashed cucumber lengthwise into bite site pieces about 3/4” wide.
Place the cucumber pieces in a colander over a bowl and season with kosher salt. Refrigerate for 20-30 minutes. Discard any cucumber water that collects in the bowl and place the smashed cucumber pieces in a mixing bowl.
Toss the cucumber with rotisserie chicken and Primal Kitchen No Soy Teriyaki Sauce and Marinade.
Serve over a bed of farrow and mixed greens. Garnish with cilantro and sesame seeds.

This was an easy and refreshing cold dinner on a hot summer night. I used the Primal Kitchen Sesame Ginger sauce and served the chicken and cucumber over a bed of cold rice noodles and mixed greens with freshly shaved Romano. Will make again and add black olives.
